Capitol Cellars opened in Boise, Idaho on March 4, 2015. Melinda and Skip Smyser, along with daughter, Logan Smyser and Executive Chef, Dave Shipley created a restaurant that focuses on serving high-quality, local cuisine and offering a world-class wine list in Boise’s subterranean Belgravia cellar location. The Idaho Statesman awarded them the title of Best New Restaurant in 2015 and they have also received the Wine Spectator Award of Excellence in 2016.
